Quarantine recipes to help pass the time

It’s easy to get bored when you’re cooped up at home. Many people are trying to find ways to stay busy, be it learning a new skill or catching up on that show you’ve been meaning to watch. With stores going out of stock left and right, what better skill to hone than cooking with new and simple recipes? If you open your cabinets to find you don’t have enough to put together a particularly lavish meal, here’s a few recipes to whip together with limited ingredients that many will already have at home! 

Recipe 1: Breakfast Quesadilla

Ingredients:

  • 2 slices of bacon
  • 1 Tortilla
  • Shredded cheese
  • 3 eggs
  • Queso
  • Salt, pepper, paprika
  • Butter

Instructions:

Cook two slices of bacon in a pan and set aside. Place the tortilla in the pan and add shredded cheese of choice. Sprinkle paprika, salt, pepper, and set aside. Butter the pan and scramble 3 eggs. Add queso and shredded bacon. Place scrambled eggs onto the tortilla and fold. Butter each side and cook again. All measurements to taste.

Recipe 2: Easy Pasta Lunch

Ingredients:

  • 1 container of cherry tomatoes
  • Garlic powder, sea salt, and black pepper (to taste)
  • Handful of spinach
  • Penne pasta
  • Oil

Instructions:

Oil pan and cook the cherry tomatoes with seasoning. Once thoroughly cooked, set aside and cook spinach. On the side, boil water and a pinch of salt and cook pasta. Put cooked spinach to the side with tomatoes, and add pasta to the pan. Add oil and seasoning, then add tomatoes and spinach. Mix for a few more minutes.

Recipe 3: Hamburger Hot Dish Din-Din

Ingredients:

  • 1 pound of hamburger
  • 2 cups of rice (precooked and cooled)
  • 1 large onion
  • 1 cup chopped carrots
  • 1 cup diced celery 
  • 1 can cream of mushroom soup
  • 1 can  cream of chicken soup
  • Salt and pepper (to taste)
  • 1 tablespoon of soy sauce
  • 2 cups of chicken broth

Instructions:

Cook the hamburger with salt and pepper. Drain the fat, and saute the onions with the hamburger. Add the cream of mushroom soup and cream of chicken soup to the hamburger. on the side in a separate smaller saucepan, cook carrots and celery in the chicken broth. Add to the hamburger and mix. Then add the rice. Put everything into an oven safe pan, and cook for 30 minutes at 325 degrees.

Recipe 4: Peanut Butter and Chocolate Banana Bite Snack

Ingredients:

  • 1 Banana
  • Peanut butter (to taste)
  • Chocolate chips (or any melted chocolate)

Instructions:

Slice the banana into bite-size pieces and place evenly onto a tray. Use about a spoonful of peanut butter (or however much you want that fits onto the banana) and place on only half of the slices. Use the other slices to put on top of the ones with peanut butter (like a sandwich). Freeze the banana for about two hours, then dip the pieces in chocolate halfway. Place back into the freezer for about 10 more minutes.

Recipe 5: Quick Mug Brownie Dessert

Ingredients:

  • 2 tablespoons of cocoa powder
  • 4 tablespoons of sugar
  • 4 tablespoons of flour
  • 4 tablespoons of water
  • 2 tablespoons of oil

Instructions:

Mix in a mug and microwave for 60 seconds. Add chocolate chunks (optional), and it’s done!
