Having a plate of these fluffy pancakes in the morning will automatically make your day “flip” from the worst to the best!

Are you tired of the bland taste of store-bought pancake mixes that leave a funny aftertaste in your mouth? Do you love restaurant pancakes so much that you want to try and recreate them?

Look no further! In our handy family recipe book, you’ll find a delicious pancake recipe dubbed “Al’s Favorite” in honor of my grandfather. These pancakes first made by my great-grandmother Maymie have been a family staple for four generations. 

“Al’s Favorite” pancakes are satisfying to see, smell and taste. They are pleasing to the eye as they are usually a single golden color or in a smooth gradient. Taste-wise, they are sweet and light even when plain, compared to restaurant pancakes, which taste saltier and more buttery. They have that same fluffy texture you would expect!

Without further ado, let’s get cooking!

Ingredients:

  • 1-2 cups of flour
  • ½ cup of sugar
  • 2 teaspoons of baking soda
  • 1 teaspoon of salt
  • 2 eggs
  • ⅓ cup of olive oil (bacon grease can be substituted)
  • 1-2 cups of milk
  • 2 tablespoons of vinegar

Instructions:

  1. Pour 1 cup of milk and 2 tablespoons of vinegar into a large bowl. It is recommended to let it stand for 10-15 minutes. You can start mixing the dry ingredients during this period.
  2. Mix 1 cup of flour, 2 teaspoons of baking soda and 1 teaspoon of salt in a separate bowl.
  3. After 10-15 minutes have passed, crack 2 eggs in the large bowl and beat until they are thoroughly mixed.
  4.  Add ½ cup of sugar to the mixture and beat until dissolved.
  5. Pour the dry ingredients into the mixture and stir until there are no lumps. The batter should be thick.
  6. Add ⅓ cup of olive oil or bacon grease to the batter and mix.
  7. If the batter is too thick, add more milk. If it is too thin, add more flour.
  8. Heat a griddle on medium to high heat.
  9. Use a ladle to pour the batter onto the griddle. Flip the pancakes when you see bubbles forming. Flip it again after 1-2 minutes and ensure no uncooked batter is inside the pancake. 

Serve on a plate, but make sure to add butter, syrup or any other condiment you desire to get the best-tasting pancakes possible! And voilà! You have homemade pancakes that are aesthetically pleasing and delicious!
